Something Wonderful 26 - True Friends

I must say that I am blessed to have so many good friends in my lifetime.  Those I call and treat as friends as the ones that are already tried and tested.  Especially when I hit rock bottom,, they are there to support me without question nor reservation.  And they offer their best to lessen my burden, agony, and grief.

In this time where "friends" do come at the click of a button, only those that we learn to spend time  with and care about become the real ones.  In is like "investing" ourselves to them and learning to trust and love them.  It may be a rare find to have one in a thousand but they are the rarest of gems once we find them.  And the more we should treasure and take good care of
them as long as we live.

Food Trip 26 - Fried Chicken Skin

Fried chicken skin is one of the popular street food in the busy city streets of the country. 

Along with the growing population is also the demand for food.  Through time, the ingenuity of people about food is always surprising.  Who could have thought of raising a chicken purely made of skins? Haha

Kidding aside, the taste of crispy and tasty fried chicken skin cannot be questioned.  Anyone who is a meat lover will definitely give in to the temptation of fried chicken skin.  And with the growing number of vendors of this stuff, fried chicken skin becomes readily available at a reasonable price.

I, too, had my moments with this food.  A modest serving of rice or two, and an order of fried chicken skin made me survive a day with minimal spending.  Truly, it was a great help during those days when I was trying to make both ends meet.

But my glory days of enjoying the fried chicken skin was cut short because a friend of mine warned me about the ill effects of this food.  The cholesterol of her father who is also fond of this food rose to an alarming level.  It was scary because her father had to undergo some expensive medications.  Since I was afraid to suffer the same fate, I disassociate myself with this kind of food right away.

Something Wonderful 25 - Quiet Moment

A quiet moment to nourish your soul is a time well spent.

It is a luxury of time for busy urban dwellers to find a quiet place and be with their creator.  Even some places of worship are not spared from noise polution of every sort.  There are even distractions within the place of worship itself.

There is no biblical rule that you need to be inside a place of worship to be able to pray.  You can pray even if you are inside your room or even at the top of the mountain.  The important thing every time you pray is your sincerity.

There are some of us who are at peace by finding our own place of prayer.  In our solitude, we can really pour our heart out before the eyes of our Creator.  In this place, we know that we are spending our quality time and moment with the Lord.  And there could never be as wonderful by spending a moment or two with our Savior.

Food Trip 25 - Steak

It's the burnt fat that I enjoy the most in a steak.

During the time when I knew nothing about steaks, I got used in grilling beef.  Since we don't have a refrigerator in the province, we use to grill the uncooked beef for the coming days.  The very first time I smelled the burning fat of beef, I right away had a liking of the meat.  The aroma of the burning beef fat already makes my mouth waters and it really makes me hungry.

Everytime I had my fill of a steak, I really spend some time smelling the burnt fat.  To me, it brings back all those fun memories especially during my childhood days.  And it is the burnt fat that I usually eat first while it is still hot.

Something Wonderful 24 - Wonderful People

What happened yesterday is already a thing of the past.

We have our own ways of coping up with whatever problem or failure that happened in our lives.  some of us may recover that fast while some may need enough time to heal himself.  But regardless of the time spent, sooner or later, we need to move on and live our lives with sound disposition.

Our family and friends contribute a lot to ou healing process and the way we cope up with our struggles.  Experts say that we need to surround ourselves with positive people because they are the best support group that we will ever need.  We need to absorb their positive energy in order for us to recover and heal fast. 

When we are down and experiencing so much pain and sorrow, it is always a good reinforcement to have those wonderful people that knows how to love and care for us.  We might not have all of them at the same time, but if we are going to look back and think about our struggling journeys, we will eventually see that each one of them enters our lives at a particular period of time.  And later on, we might be able to realize that each one of them offered their most precious support at a particular perfect time.

To all those wonderful people who unselfishly shared all they could afford to share to lessen our burden and helped us live another day, we might not be able to thank them in the process but we will always remember them for they will always be a part of us.

Food Trip 24 - Fried Bangus Skin

There's a restaurant in Greenhills where they offer bangus or milkfish as their specialty dish.  Well, aside from bangus, they also have the common meat stuff to attract more customers.

As we browse through their menu, a fried bangus skin caught our attention.  In order to satisfy our curiosity, we ordered one.

The meat of bangus is separated from its skin.  The skin was then cut into into strips and deep fried until it becomes crispy.  It has been seasoned to taste already before it was deep fried.

The moment it was served to us, we found the oil used for cooking the bangus skin still present in it.  It could had been better if they placed that one on a paper towel in order for the oil to be absorbed first before serving.  Since it was freshly prepared, it was like a chicharon with all those crackling sound every time you eat it.  It would be a good finger food during a beer drinking spree.  But the catch is, its crispiness was gone after several minutes.  I guess you need to finish this one as fast as possible the moment it is serve.

Something Wonderful 23 - Memories

 There are some memories that we hold dearly inside our heart and close to our soul.

There are people whom we meet along the way and though some of them lingered only for a while, they left a mark in our heart that cannot be simply forgotten over time.  These people whom we might not have any contacts with or perhaps have forgotten us, still, there is no denying that they will forever become part of our existence.

We might have our lives to live and to cherish.  We might have narrowed down our list of people whom we treat dearly.  But sometimes when our memories are refreshed by those who made us special in some ways, those good old and wonderful days once again will reminds us.  And through time, even if our memories will fade, we pray that some things that are wonderful and still worth remembering would not leave our heart and soul.

To those people whom are part and were part of our existence, it is but just fitting to remember them once in a while to make them alive in our heart and soul. May they stay happy and live wonderful lives.

Food Trip 23 - Bibingka

Bibingka is a native delicacy that is available the whole year round.  Oftentimes, food stalls selling bibingkas and other similar delicacies could be encountered in almost every nook the moment the "ber" months are in.

We were waiting for a jeepney ride and in a street corner, there was this stall selling bibingka and puto bumbong.  The bibingka smells good though they had started cooking that one.  We wanted to taste their so-called special bibingka but there was already someone waiting for several orders of that stuff.  Since we could not wait any longer, we deferred our craving.

In the course of our conversation, I asked the lady vendor what made their bibingka special.  She proudly answered that their bibingka has salted egg.  In that case, I told her that I am also special because I have the same stuff as well.  The man waiting for his orders of bibingka could not help but to laugh upon hearing my joke.  The lady vendor looked at me a bit puzzled.  Hehe.
